Tea

Largely grown throughout India and
Sri Lanka, these estate teas include such favourites as
Darjeeling and Earl Grey, known for their distinct deep
amber hue and rich flavour. Black tea is plucked, allowed to
wither, then rolled, heated and fermented for 8-12 hours. Bold yet familiar, these
full-bodied teas are often enjoyed with milk and sugar.

French Blend
With their innate sense of style and sophistication the
French elevate even the simple act of taking tea to an art
form. The Assam component gives the tea richness
whereas the Nilgiri and Ceylon gives the tea a saucy but
sprightly flavor. From Kenya there is romance and
mystery with superb golden color notes and from China there
is the delicate perfume of Jasmine. To cement the
“French” character, lavender from Provence was added along
with rose petals.

Margaret’s Hope Darjeeling
This tea is named after the youngest daughter of a tea
grower who dearly loved her father’s tea garden. Sadly, she
fell ill and died on board ship during a return trip to
England. In her memory, her father changed the garden’s
name to Margaret’s Hope. The bushes at Margaret’s Hope have a
superb fragrance, some would describe the taste as nutty;
others find it reminds them of black currants, but most
often it is described as similar to the taste and fragrance
of Muscat grapes.

Organic Ceylon Single Estate
Koslande is one of the estates that we use in this Ceylon
organic tea. In Sri Lanka terms it is a medium sized tea
estate covering 160 hectares (406 acres). It is situated in
the Haputale Mountain Range in the region of Uva. Uva and
Nuwara Eliya are Sri Lanka’s highest elevation tea growing
regions and are world renown for some of the finest teas in
the world – especially when they are at their seasonal best.
Koslande is also a member of the Fair Trade Organization and
has been a member since 1996.

Organic Assam
Full bodied and brisk with tremendous flavor- all the
characteristics that make this 2nd flush Assam a great tea.
Historically the Assam tea bush is a subgenus of Camellia
Sinensis, this variety was found growing wild in the Assam
province of northeast India in 1823. By 1837 it was
successfully cultivated in Assam and in May 1838 the first
chests were shipped to London (true organic tea- grown
before the advent of artificial fertilizers and herbicides).

Organic Lapsang Souchong
A smooth crisp character with the remarkable and heady aroma
of a pine and oak wood fire. Legend claims that the smoking
process was discovered by accident: during the Qing
dynasty, an army unit passing kept the villagers from work.
By the time they left it was too late to dry the leaves in
the usual way so they lit open fires of pine wood to hasten
the drying. Not only did the tea reach the market in time,
but the smoked pine flavor created fantastic sensation.
