What Is Matcha?
"The mother of all
green tea!"
Matcha is the oldest and
most premium variety of
green tea in Japan - the
mother of all green tea!
For over 800 years, Zen
Buddhist monks have been
using Matcha green tea as a
meditational drink. Matcha
is very exquisite: only a
few dozen tea farmers in all
of Japan own the extensive
knowledge required to
produce this tea. Matcha tea
leaves grow slowly in shaded
tea plantations. The fresh
leaves are primarily
handpicked, dried and ground
by low friction granite
stone mills into an ultra
fine, jade green powder, and
finally whisked typically
with a bamboo whisk. The
result is a unique, creamy
velvet, full-bodied cup of
premium green tea -
extremely high in
antioxidants, amino acids
and other nutrients.
Matcha Latte:
Combine 1tsp of Matcha
with 1 tsp of hot water
and blend the matcha by
using the back of spoon
to create a paste
without any clumps. Add
6-7 oz steamed milk* and
serve
Iced Matcha
Latte:
Combine 1 or 1 1/2tsp of
Matcha with 1 tsp of hot
water and blend the
Matcha by using the back
of the spoon to create a
paste. Add 6-7oz of
steamed Milk* and serve
over ice.
Matcha Smoothie
Fill a 16oz cup with
ice. Add cold milk* to
the brim of ice-filled
cup and pour the mixture
the into the blender.
Add 2-3tsp of Matcha
into the blender and
blend until smooth. Add
1 to 2 pumps of vanilla
flavored syrup if
desired.

Is any other food or drink reported to have as many health
benefits as green tea? The Chinese have known about the
medicinal benefits of green tea since ancient times, using
it to treat everything from headaches to depression.
The secret of green tea lies in the fact it is rich in
catechin polyphenols, particularly epigallocatechin gallate
(EGCG). EGCG is a powerful anti-oxidant: besides inhibiting
the growth of cancer cells, it kills cancer cells without
harming healthy tissue. It has also been effective in
lowering LDL cholesterol levels, and inhibiting the abnormal
formation of blood clots. The latter takes on added
importance when you consider that thrombosis (the formation
of abnormal blood clots) is the leading cause of heart
attacks and stroke.

Ancient Yellow Buds 
This
Yellow tea is one of the six major tea categories and is
only produced in China, where its production can be traced
back hundreds of years. Yellow teas are rarely exported and
are mainly produced in Sichuan, Hunan, Anhui and other areas
of eastern and central China. Unlike green teas, which are
quickly dried after firing and rolling, yellow teas are
piled to achieve partial oxidization after firing, in order
to remove the fresh and brisk flavors that are common in
green tea. Through partial oxidation, yellow teas develop a
golden infusion color and smooth, rich flavor. The unique
yellow tea pile fermentation process (oxidation) converts
tea polyphenols into complex tea polyphenols known as “theaflavins,”
which yield a yellow pigment in the leaf, creating a clear,
golden colored infusion that is the signature of yellow tea.
Most yellow tea is made with small leaf green tea bush
varietals, but our new type yellow tea is produced with the
Ancient Yunnan Da Yeh broad leaf varietal, harvested in a
1500-year-old tea forest. This gives our yellow tea a unique
character that stands out among all others.
Yellow Buds has a wonderfully unique profile with a rich,
sweet and savory flavor accented by notes of peeled apples,
magnolia, honeysuckle, baked sweet potato and rice wine.
Yellow Buds resembles Silver Needle white tea and is
composed of pure ripe bud shoots. It was harvested in
Yunnan’s Mannong Manmai ancient tea garden and handcrafted
with artisan methods inspired by Hunan’s famous Jun Shan Yin
Zhen yellow piling process; however, this tea has a much
more assertive and fruity flavor indicative of the Yunnan
broad leaf character. Our Yellow Buds is a one of a kind
yellow tea made with ancient heirloom broad leaf tea trees.
Use a lot of leaf and brew one serving multiple times to
enjoy the full flavors and aromas that present themselves
over the course of multiple infusions.

Houjicha
Smooth,
Organic hojicha,
also a green tea which is a favorite of the Japanese, is
made of organic Japanese bancha tea (tea made from the
mature leaves of the tea plant). Organic hojicha is a
mixture of pan-fired and slow roasted loose leaf green tea
leaves that yield a rich, nutty brew. Many Japanese escape
into retreat establishments overlooking the glistening Lake
Motosuko in the Japanese Alps just to enjoy this organic

Organic Jasmine Pearl
The most tender green tealeaves and buds are hand rolled
into small pearls and infused with the essence of fresh
jasmine blossoms. The fragrant blossoms are mixed with our
reserve Dragon Pearl green tea according to a traditional
tea scenting process that dates back more than 9 centuries.
The tea absorbs the fragrant essence of the fresh jasmine
flowers, making the pearls sweet and very aromatic. The
blossoms are then removed by hand after the scenting
process, leaving only the jasmine-infused tea pearls.
Jasmine tea is said to ease nervous tension, break down
saturated fat, reduce cholesterol and increase circulation.

Organic Jasmine Gold Dragon
Gold Dragon is one of the finest Jasmine teas available.
The Jasmine tree only blooms during May and June. The
blossom lasts for about 12 hours and only comes out at night
after the sun goes down. About half way through the night
the fragrance is at it’s peak and it is at this time the
blossoms need to be picked and layered into the tea, by
morning most of the fragrance has disappeared from the
blossom, but if the tea maker has done his job correctly,
this heavenly scent has been transferred to the tea and
captured in time.

Strawberry Green Tea
Green tea is produced by forgoing the oxidation process
required to
produce black tea. Instead the leaves are steamed as soon as
they are plucked and then bruised either by machine or by
hand. The leaves are then pan-fried or basket fired - a
process that gives tea its distinctive glossy look and feel.
It is this manufacturing process that also gives green teas,
and this Sencha in particular, their light sweetish flavor-
a perfect match to the taste of fresh summer strawberrys.
